PERI PERI CHICKEN

Although piri piri sauce is found in Portuguese cuisine its origin is actually derived from a Swahili word for pepper pepper. The chilies used  for the piri piri sauce are African bird’s eye chilies. In addition to Portugal the piri piri sauce is found in the cuisines of many African countries. (1)

It is typically made in a blender these days and consists of chilies, lemon, oil, red bell peppers and garlic. It is a delicious but sp.icy sauce that can be used both as a marinade and as sauce. It goes great with either chicken or seafood…..Enjoy!

Ingredients

1 whole chicken, butterflied or cut into pieces

Peri Peri Sauce:

10-20 red chilis, traditionally you would use piri piri (bird) chilis, but I used red jalapenos

6-8 sweet peppers

4 cloves garlic

A small handful of fresh oregano

1/2 Cup vegetable oil

1/2 Cup white wine vinegar

1/2 Cup lemon juice

2 Tablespoons paprika

2 Tablespoons brown sugar

Pinch of salt

Method

Chop up all chilies and peppers leaving all the seeds. Sauté all in hot oil until soft. Simmer for a while remove from heat and let it cool. Once cooled process in a blender. Use for marinade and sauce
