MAPLE SYRUP BBQ SAUCE
Maple syrup was first produced from maple sap by the idigenous peoples of North America where it was used as a main source of nutrition and energy. Many native rituals were formed around its consumption and its production. Aboriginal dishes of the period replaced the sugar found in European dishes with maple syrup or maple sugar.
Quebec produces 75% of the world’s market and Canada as a whole produces up to 80%. (1) This week’s recipe is a pdeasant change from the usual use of maple syrup with pancakes or waffles ans is a great way to initiate your new BBQ……Enjoy!

Ingredients
Vegetable oil
1 onion chopped finely
2 chipotle chilies in adobo sauce chopped
1/2 cup bourbon whiskey
1 cup tomato sauce
1/3 cup fresh lemon juice
1/3 cup apple cider vinegar
1/3 cup molasses
1/4 cup worcestershire sauce
1/3 cup maple syrup
salt to taste
Method
Saute onion in oil until starts to brown. add in chili and rest of the ingredients bring to a simmer and simmer for awhile until the sauce thickens a bit. Strain the sauce and adjust the seasonings. You can use a bit of this sauce to baste the cornish hen at the final stages of the grilling
MAPLE MARINATED GRILLED CORNISH HEN (QUAIL)
Marinade
Ingredients
1/4 cup maple syrup
2 tblsp maple sugar
2 tblsp soy sauce
1/4 cup dry sherry
2 tblsp minced shallots
Method
Combine and marinate bird in a plastic bag ib the frig for at least two hours or over night.
Cut out the back bone of the bird and flatten carcass before marinating
