Michael’s Quick, Easy and Delish Dish

MEXICAN CORN SALAD

This is a great salad to accompany grilled chicken or meats. be aware the dressing adds a tasty smoky chili hit! Mexican cuisine is known for its use of fresh ingredients and chilies of all varieties, this one is no exception. Serve it to your guests at your next BBQ. They will love it! ……Enjoy!

Sweetcorn Kernels

Diced Tomatoes

Diced Red Bell Pepper

Diced Red Onion

Chopped Lettuce

Avocado

Black beans

CHIPOTLE HONEY VINAIGRETTE

 Ingredients

6 tablespoons red wine vinegar

1/4 cup honey

3/4 cup vegetable oil

1/2 teaspoon dried oregano

1/2 teaspoons salt

1/2 teaspoon ground black pepper

2  chipotle peppers in adobo sauce

2 small garlic cloves, roughly chopped

 Instructions

 Combine all of the ingredients in a blender or mini food processor and process until smooth. Taste and adjust seasoning if necessary. Serve immediately or store in an airtight container in the refrigerator.
